Soy sauce | 2 Tablespoon | |
Crunchy peanut butter | 2 Tablespoon | |
Chili flakes | 1/2 Tablespoon (optional) | |
Brown sugar | 2 Tablespoon | |
Lemon juice | 1 Tablespoon | |
Coconut milk | 3 Tablespoon | |
Onion | 1 Medium , finely chopped | |
Garlic | 2 Small , crushed | |
Firm tofu | 1/2 Pound , diced into 1 inch pieces (500g) | |
Oil | 2 Tablespoon |
GETTING READY:
Preheat oven to 400°F/200°C.
Soak wooden skewers in water.
Line a baking dish with foil and place a rack over it.
MAKING:
In a frying pan, heat oil and sauté onions and garlic until soft, for 5 minutes.
In a bowl, combine chili flakes, brown sugar, lemon juice, peanut butter, coconut milk, soy sauce and mix well.
Add sautéed garlic mixture, tofu and mix well.
Skewer the tofu and place on rack.
Pop into oven and bake for 3-4 minutes (per side).
