Breakfast Toast Cups

These breakfast toast cups are easy to make and are the perfect bite-sized finger food for a brunch or luncheon. These have definitely become a staple in my collection of recipes and the best part about these is that you can pretty much make them with anything you want--different veggies, bacon instead of ham, swiss cheese instead of cheddar, etc. Get creative and make these with your favorite ingredients!


Whole wheat bread 12 (Slices, with crust cut off of each slice)
Eggs 4
Cheddar cheese 1/3 Cup (5.33 tbs)
Onion 1/2 (diced)
Mushrooms 1/3 Cup (5.33 tbs) (chopped)
Garlic 1 Clove (5 gm) (minced)
Salt and pepper 1 Dash
Butter 2 Tablespoon (For greasing)
Ham slices 3 (diced)
Olive oil 1 Tablespoon
Fresh spinach leaves 2 Cup (32 tbs)


1. Preheat your oven to 350 degrees F.

2. Chop your onion, mushrooms, and ham.

3. Heat the olive oil in a pan over medium heat and once it's hot, add the veggies, spinach, garlic and ham. Sautee these for 10 minutes until onions and mushrooms are tender and the spinach is wilted.

4. While the veggies and ham are cooking, grab a bowl and crack all the eggs into it. Add in the salt and pepper and whisk until the eggs are well combined.

5. After 10 minutes, or after the onions become translucent, add the egg mixture and stir. Let cook for 3-5 minutes stirring occasionally, until eggs look ALMOST cooked (you do not want them to be cooked completely because they are going to go in the oven).

6. While the eggs are cooking, take your slices of bread with the crust removed, and butter one side of each slice.

7. Using a muffin pan, place the butter side of the bread down into each of the individual spots, you will notice that they form a cup in the muffin pan molds.

8. Divide the egg, veggie and ham mixture evenly among each cup in the muffin pan until there is no more egg mixture.

9. Top each cup with the cheddar cheese and place into the oven for 10-12 minutes until the cheese is bubbling on top of each toast cup (make sure that the bread isn't getting too brown).

10. Let cool for 1-2 minutes, remove from the pan and enjoy!
