Hot Crab Canapes

Ingredients

Crab meat 1/2 Pound
Butter 3 Tablespoon
Flour 2 Tablespoon
Salt 1/2 Teaspoon
Freshly ground pepper 1 Dash
Milk 3/4 Cup (12 tbs)
Cream 3/4 Cup (12 tbs)
Paprika 1/2 Teaspoon
Dry sherry 1/4 Cup (4 tbs)
Butter 2 Tablespoon
Toast rounds 3 1/2 Dozen

Directions

Heat 3 tablespoons butter in blazer pan over moderate heat.

Stir in flour, salt, and pepper and let bubble.

Stir in half-and-half and cook and stir until mixture boils and is thickened.

Place over hot water in water pan and stir in crab meat, paprika, sherry, remaining butter.

Cook until mixture is thoroughly heated.
