Thai Sweet Corn Cutlets by Tarla Dalal

This recipe will be unlike any cutlet you have tried so far -- it is not made of potatoes, spinach, raw bananas or any of the usual stuff! the thai sweet corn cutlet is made from a contrasting combination of juicy sweet corn kernels and fierily pungent red curry paste. If this is not spiky enough, the hot and sweet dip will doubtlessly push this cutlet into the spicy category!

Ingredients

For red curry paste
Whole dry kashmiri red chilies 5 , soaked in warm water for 10 minutes
Chopped onion 1/4 Cup (4 tbs)
Garlic cloves 4
Coriander seeds 1/2 Tablespoon
Cumin seeds 1 Tablespoon
Black peppercorns 6 (5
Coriander stalk 10
Chopped lemon grass 2 Tablespoon
Salt To Taste
For the cutlets
Sweet corn kernels 1 1/2 Cup (24 tbs) , boiled and coarsely crushed
Rice flour 1/4 Cup (4 tbs)
Soy sauce 2 Teaspoon
For hot and sweet dip
Sugar 3/4 Cup (12 tbs)
Vinegar 2 Tablespoon
Dry red chili flakes 1 Tablespoon
Chili powder 1/2 Teaspoon
Other ingredient
Oil 1 Tablespoon (For greasing and cooking)

Directions

GETTING READY

For Red Curry Paste:

1. Blend soaked red chili, onion, garlic, coriander seeds, cumin seeds, peppercorn, coriander stalk, lemon grass and salt with little water into smooth paste.

MAKING

For Cutlets:

2. In a bowl, combine sweet corn, rice flour, salt, 2 tablespoons of red curry paste and soy sauce. Mix well.

3. Divide the mixture into 8 equal portions and shape them into patties.

4. Heat a non-stick griddle, grease it with oil and cook 4 cutlets at a time, using little oil, until they turn golden brown from both the sides. Cook the remaining and set aside.

For Dip:

5. In a non-stick pan, combine ¾ cup of water, sugar and vinegar. Stir constantly and cook on high flame for 4-5 minutes or until the syrup becomes thick.

6. Turn off the flame, add the dry red chili flakes, chili powder, and salt. Mix well and set aside to cool.

SERVING

7. Serve the cutlets hot with hot and sweet dip.
