Easy Vegetarian Thai Yellow Curry

It's my comeback video! After a couple months break, I'm back with my recipe videos.
In this clip I prepare for you an easy vegetarian (and also suitable for vegans) Thai Yellow curry. A mild version, this is a super delicious exotic dish.

Coconut milk 400 Milliliter
Yellow curry paste 50 Gram
Potatoes 330 Gram , chopped
Mushrooms 150 Gram , chopped
Water 100 Milliliter
Rest of the vegetables for the curry
Zucchini 200 Gram , chopped
Snow peas 120 Gram
Bamboo shoot slices 150 Gram , drained
Baby corn 130 Gram , chopped
For the seasoning
Salt To Taste
Pepper To Taste



1. Heat up 10 tbsp coconut milk at low temperature.

2. To this add the curry paste and mix well to combine.

3. Add the potatoes and mushrooms and combine.

4. Add the rest of the vegetables, coconut milk and water.

5. Season with some salt and pepper to taste. Combine well and let simmer for 20 minutes at low temperature.


6. Serve warm with rice.
