Pineapple Fried Rice

This week, we venture into the world of Thai food and we make pineapple fried rice!


Rice 2 Cup (32 tbs) , cooked
Pineapple 1 Small , diced (fresh/ canned)
Chicken/Tofu 1/2 Pound , cut into cubes
Tomatoes 1 Large , diced
Red bell pepper 1 Medium , diced
Onion 1 Medium , diced
Carrots 2 Small , diced
Eggs 2 Medium , lightly beaten
Curry powder 1 Tablespoon
Raisins 1/4 Cup (4 tbs)
Sugar 1 Teaspoon
Soy sauce 2 Tablespoon
Fish sauce 1 Tablespoon
Cooking oil 2 Tablespoon



1. In a pan heat cooking oil. Pour the eggs into the pan and scramble them. Add in the onion.

2. When onion starts to brown, add in the carrots (either add some water and cover to cook the carrots a little or use steamed carrots).

3. Add the chicken (or any meat of choice), cook it completely.

4. Put rest of the vegetables, tomato and red pepper. Add the rice and stir-fry to combine all.

5. Season the fried rice with some fish sauce, soy sauce, sugar, curry powder and raisins.


6. In a serving plate, serve the fried rice warm.
