Thai Crab 'Club' with Avocado 'Mayonnaise'

Ingredients

Avocado mayonnaise 8 Tablespoon
Whole grain bread slices/7 grain bread
Papaya 1 Pound , peeled and seeded (Ripe)
Crabmeat 2 Cup (32 tbs) (Jumbo Lump , Picked Over For Shell And Cartilage)
Fresh cilantro leaves 6 Teaspoon , chopped
Ripe tomatoes 2 Large
Black pepper To Taste , coarsely ground

Directions

MAKING

1) On each slice of toast spread 1 tablespoon of the avocado "mayonnaise" on one side.

2) Slice the papaya into 1/4-inch-thick pieces and place over the bread. 3) Spoon over 1/3 cup crabmeat, then sprinkle each with 1 teaspoon cilantro.

4) Slice the tomatoes into 1/4-inch-fhick pieces and place the 6 center slices over the crab.

5) Sprinkle the tomatoes with the pepper to taste and top the center of each sandwich with a teaspoonful of the avocado "mayonnaise".

SERVING

6) Serve immediately on individual serving plates.
