THAI RED CURRY Chicken CRISPY Springrolls

This recipe is far from authentic, but it is packed with Thai flavours and is party perfect. When I develop recipes for large crowds, Im always thinking about flavor, impact and stretching the budget. A chicken spring roll is soooo boring but offer a Thai Red Curry Chicken Spring roll and you have them begging for more. Using bean noodles or glass noodles in this recipe really stretches the filling to make this appetizer economical.

The stars are the authentic Thai flavours Lemongrass, Galangal, red Chillies, Garlic. The first thing we need in this recipe is a great red curry paste, you can either use store bought paste or try my incredibly fragrant and delicious blend

Ingredients

Shallots 1/2 Cup (8 tbs)
Chilli oil 2 Teaspoon
Red curry paste 3 Tablespoon
Ground chicken 1 Pound
Bean noodles 150 Gram , prepared as per package directions, cut into 2
Fish sauce 1 Tablespoon
Diced red peppers 1/2 Cup (8 tbs)
Diced carrots 1/2 Cup (8 tbs)
Chopped peanuts 2 Tablespoon ((optional))
Chopped coriander/Cilantro leaves 1/2 Cup (8 tbs)
Flour paste 2 Tablespoon
Oil 2 Cup (32 tbs) ((For deep frying))
Lime juice 1 Dash

Directions

 

MAKING:                        

In a wok, saute shallots in chilli oil.

Add red curry paste, ground chicken and stir well.

Add bean noodles, fish sauce, red peppers, carrots, peanuts (optional) and stir well to combine.

Add lime juice and stir one. Refrigerate until chilled.

Add coriander leaves once chilled.

Separate spring roll wrappers and place filling on top.

Fold over and seal using flour paste.

Heat oil in a skillet/wok and deep fry rolls in batches.

 

SERVING:                       

Serve with sauce and enjoy!
