Healthy Thai Green Curry

Stick to that new year's resolution and get lean this January! The body coach Joe Wicks shows you how to make a healthy Thai green curry packed full of flavour but very good for you.


Coconut oil 1 Teaspoon
Chicken breasts 2 , chopped
Coconut milk 6 1/2 Ounce (1/2 tin)
Baby corn 1/2 Cup (8 tbs) (Handful)
Mange tout 1/2 Cup (8 tbs) (Handful)
Thai green curry paste 3 Teaspoon
Spring onions 2 , chopped
Garlic 1 Clove (5 gm) , chopped
Red chilli 1
Fresh basil 1 Cup (16 tbs) (Handful)
Chopped onions 1/4 Cup (4 tbs)
Chopped red pepper 1/4 Cup (4 tbs)
Broccoli florets 1/4 Cup (4 tbs)



Heat oil in a wok and fry onion, garlic, chilli, 1 teaspoon of curry paste in it.

Add chicken pieces and allow to cook for few minutes.

Add corn, red pepper, broccoli, mangetout, spring onion and cook well.

Pour coconut milk, remaining curry paste and allow to cook for 3-4 minutes.

Garnish with basil leaves.



Serve with rice and enjoy!
