Easy Thai Chicken Soup Collab Video with Kravings Food Adventures

Today's video features an easy and delicious recipe from my friend Karen Ahmed at Kravings Food Adventures for Easy Thai Chicken Soup. Chicken is slathered in a delicious Red Thai Chili Sauce. Sauteed to a tender golden and combined with mushrooms, onion, red pepper, kaffir lime, chicken stock, rice and coconut milk - this simple recipe has a depth of flavour that will knock your socks off!


Rice/Chicken tenders 1/4 Cup (4 tbs)
Boneless skinless chicken breast 1 , butterflied
Red curry paste 1 Teaspoon
Red onion 1/2 , finely chopped
Vegetable oil 1/2 Tablespoon
Mushroom 6 , sliced
Red pepper 1 , cut into strips 2 inches long
Chicken stock 2 Cup (32 tbs)
Red curry paste 2 Teaspoon
Kefir lime leaves 2 (lime leaves can be substituted with bay leaf and lime zest)



1.  Precook the rice.

2.  In a bowl, combine chicken with one tablespoon of red curry paste and stir to coat evenly.



3.  In a non stick pan, put the chicken and saute over medium heat for about 5 minutes or until cooked through. Remove from the heat and cut into bite size cubes.

4.  In a large pot, heat vegetable oil and add red onion, saute until the onion becomes soft. Add in the mushroom slices and continue to saute till the mushrooms begin to release their water.

5.  Add in the red pepper slices and saute for about 10 seconds. Return the chicken back to the pot, along with two teaspoons of thai red curry paste. Stir and pour in the chicken stock and add in the kefir lime leaves.

6.  Add cooked rice to the pot along with coconut milk. Stir well and heat through.



7.  Ladle into soup bowls and serve garnished with coriander leaves.
