Fragrant Thai Red Curry Paste

Create your own magical Thai Curry Paste at home. Make up a batch and enjoy flavouring many soups, stews, curries and stir frys. The fresh taste cannot be compared to any store bought product.


Dried red chilies 20 , cut in half and deseed. soaked overnight in water
Lemongrass stalks 2 , chopped
Galangal piece/Frozen galangal 1
Shallots/Red onion 3
Garlic cloves 4 , chopped
Coriander roots/Coriander stems 3
Kaffir lime leaves 2 , snipped
Fish sauce 3 Teaspoon
Crab paste/Shrimp paste 1 Teaspoon
Coarse salt 1 Teaspoon
White pepper powder 1 Teaspoon



Deseed the dried red chilies and soak them in water overnight.


In a blender, place the drained soaked chilies and coarse salt. Blend well.

Add the garlic, galangal, lemongrass , shallots, fish sauce, white pepper powder, and crab/shrimp paste. Blend it well


Use it immediately, or freeze it  to use it overtime.
