Thai Style Pork Kebabs with Asian Greens and Peanut Sauce

The Food Coach Judy Davie shows you how to make Thai-Style Pork Kebabs with Asian Greens Peanut Sauce using Australian Pork. Lean pork is a great source of protein.

Ingredients

Lean pork mince 500 Gram
Shallots 2 , finely chopped
Red curry paste 2 Tablespoon
Chopped coriander 1/2 Cup (8 tbs)
For peanut sauce
Crunchy peanut butter 2 Tablespoon
Garlic 2 Clove (10 gm) , crushed
Lime juice 2 Tablespoon
Finely chopped chili 1
Honey 1 Teaspoon
Salt reduced tamari 1 Tablespoon
Water 1/2 Cup (8 tbs)
For asian greens
Asian greens 1 1/2 Cup (24 tbs)
Sesame oil 1 Teaspoon

Directions

GETTING READY

1. Preheat the grill pan with a parchment paper.

MAKING

2. Mix together pork mince, red curry paste, shallots and coriander. Divide the mixture into 8 balls.

3. Skewer a ball in each skewer and spread them through the length of the skewer with your hand.

4. Place it in the fridge while you prepare peanut sauce.

5. Heat peanut butter in a pan, add to it garlic, lime juice, finely chopped chili, honey, salt reduced tamari and water. Mix it all together at a gentle heat for about 10 minutes. Set the peanut sauce aside.

6. Place the pork kababs on the grill pan and cook it evely by rolling it around for roughly 8 minutes.

7. Let the pork rest on the side.

8. Heat sesame oil in a pan, throw in the asian greens and stir fry it.

SERVING

9. Make a bed of asian greens, place the pork kababs on top, drizzle the peanut sauce on the kababs and serve.
