Rum Raisin Butter Tart Squares

For base
Butter 1/2 Cup (8 tbs) , softened
Icing sugar 2 Tablespoon
All purpose flour 1 1/2 Cup (24 tbs)
For topping
Packed brown sugar 1 1/2 Cup (24 tbs)
Butter 1/4 Cup (4 tbs) , melt
Eggs 2 , beaten
White vinegar 1 Tablespoon
Dark rum 1 Tablespoon
Vanilla 1 Teaspoon
Raisins 1 Cup (16 tbs)



1. For base, in a bowl, add butter, and icing sugar. Blend until creamy.

2. Drop flour and mix until the mixture appears like small crumbs.

3. Line a 9-inch square cake pan with parchment paper. Transfer mixture into it and press well.

4. Preheat oven to 350 degree F or 180 degree C.


5. Place cake pan in oven, and bake for 12-15 minutes or until light golden.

6. Meanwhile, for topping, in a separate bowl, combine sugar, butter, egg, vinegar, rum, and vanilla. Whisk well.

7. Drop raisins, and mix to combine.

8. Pour mixture over baked base.

9. Pop pan back into the oven, and bake for about 35 minutes or until light golden crust is formed but the center is still jiggly. Transfer it to wire rack and let it cool completely

10. Pop it into the refrigerator for 1-2 hours.


11. Cut into squares and serve chilled.
