All purpose flour | 1 1/4 Cup (20 tbs) | |
Sugar | 1/3 Cup (5.33 tbs) | |
Salt | 1/4 Teaspoon | |
Butter | 8 Tablespoon , diced | |
Cold water | 3 Tablespoon | |
Fresh blueberries | 3 Cup (48 tbs) , divided | |
Water | 1/4 Cup (4 tbs) | |
Cornstarch | 2 Tablespoon | |
Cold water | 2 Tablespoon | |
Sugar | 1/3 Cup (5.33 tbs) | |
Lemon zest | 2 Teaspoon | |
Lemon juice | 2 Tablespoon |
GETTING READY:
1.Preheat oven to 375F.
MAKING:
2.For the pastry, combine flour, sugar, salt in a bowl and whisk well.
3.Cut in butter cubes and add water in small quantities. Mix well to form dough and press into tart shell pan as shown in the video.
4.Pop into oven and bake for 15 minutes.
5.In a pot, combine cup of water, 2 cups of blueberries and cook for 5 minutes until berries turn soft.
6.In a small bowl, dissolve cornstarch with water and add to blueberries. Add sugar, lemon zest, lemon juice and stir well.
7.Allow to simmer for 5-10 minutes until mixture thickens.
8.Remove from heat and add remaining blueberries. Mix well.
9.Pour the mixture into cooled crust and pop into refrigerator. Chill for 4 hours or until set.
