GETTING READY
1. Slice the aubergine into one inch rings and place in a colander. Sprinkle with salt and set aside for 30 mins, then pat dry with kitchen towel.
2. Preheat the oven to 200 C. Line a baking tray with baking paper and set it aside.
MAKING
3. Drizzle oil over aubergine slices and coat well.
4. Grill the aubergine on a pan.
5. Roll out a puff pastry and cut into two.
6. Place a pastry over prelined baking tray. Brush it with egg wash.
7. Bake for around 15 minutes or until nicely puffed and brown.
8. Arrange grilled aubergine and goat cheese slices over the puff pastry.
9. Place ham slices strategically. Sprikle thyme and drizzle olive oil.
10. Bake for about 5 minutes. Meanwhile toast the pine nuts.
SERVING
11. Spread toasted pine nuts over the tart, drizzle some honey and serve.
