Betty's Amber Glacé

Betty demonstrates how to make Amber Glacé. This is a terrific topping for ice cream, particularly during the summer months.


White granulated sugar 1/2 Cup (8 tbs)
Light brown sugar 1/2 Cup (8 tbs) , firmly packed
Orange juice 1/2 Cup (8 tbs)
For serving
Crushed peanut brittle 1/2 Cup (8 tbs)
Vanilla ice cream 1 Pint
Mint sprigs 6 (as needed)



1. In a large pot, add white sugar, brown sugar, and orange juice. Stir constantly and bring to a boil over medium heat. Reduce heat to low and cook for 8-10 minutes or until temperature is approximately 220 degrees.

2. Remove from heat and let the mixture cool.



3. In sherbet dish, place scoops of ice cream and top with the Glacé.

4. Sprinkle crushed peanut brittle over the top.



5. Garnish with a mint sprig and serve immediately.
