Chocolate Whoopie Pies Recipe - Joanne Eats New England - Quick Seven Minute Marshmallow Frosting

Take a bite of one of these chocolate whoopie pies and you'll be transported to another place. In this video I show you how to make this tasty dessert that hails from New England. I did a chocolate version whoopie pie with a quick seven minute marshmallow frosting.

Ingredients

For whoopie pie batter
All pupose flour 15 Ounce ((3 cups))
Unsweetened cocoa powder 6 Ounce ((1.5 cups))
Baking soda 1 Tablespoon
Baking powder 1 Teaspoon
Salt 1/2 Teaspoon
Unsalted butter 1 Cup (16 tbs) ((2 sticks, at room temperature))
Sugar 1 1/2 Cup (24 tbs)
Eggs 2 Large ((extra large))
Buttermilk 2 Cup (32 tbs) , at room temperature ((powdered buttermilk and water used))
Pure vanilla extract 1 1/2 Teaspoon
For seven minute marshmallow frosting
Sugar 3/4 Cup (12 tbs)
Corn syrup 1 Tablespoon ((white corn syrup))
Egg whites 1/4 Cup (4 tbs) ((about 2 egg whites))
Salt 1/8 Teaspoon
Pure vanilla extract 1 Teaspoon

Directions

GETTING READY

1. Preheat oven to 400 degree F.

2. Line two sheet pans with parchment paper and set aside.

MAKING

3. In a bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

4. In a separate bowl, cream together butter and sugar until well mixed.

5. Add eggs, buttermilk, and vanilla extract. Beat until well combined.

6. Slowly mix in the dry ingredients until well blended. Do not over mix the batter.

7. Using a medium sized scooper, scoop out batter and place it onto the sheet pans.

8. Place the sheet pans in oven and bake them in the center of the oven for 10-12 minutes. Remove the pans from oven and let them cool.

For Frosting:

9. To make the frosting, set up a double boiler, and add sugar, corn syrup, egg whites, and salt in it.

10. Using a hand mixer on medium speed, whisk the mixture for exactly 7 minutes or until thick and glossy.

11. Add vanilla extract, mix well and let it cool.

FINALIZING

12. To assemble, place a scoop of the frosting in between two pie halves. Repeat for the remaining.

13. Serve and enjoy!
