Creme Anglaise

Milk 1 1/2 Cup (24 tbs)
Salt 1/8 Teaspoon
Egg yolks 3
Sugar 3 Tablespoon
Vanilla extract/Almond extract 1/2 Teaspoon



1) In top part of a double boiler over simmering water, heat milk.

2) In a bowl mix together salt, egg yolks, and sugar.

3) Stir in small amount of hot milk in the egg yolk mixture and put back in top part of double boiler.

4) Cook the mixture, stirring for 20 minutes or until thickened.

5) Remove from double boiler and cool.

6) Flavour sauce with vanilla extract.


7) Serve as desired.
