Vegan Thanksgiving - Your Vegan Main Dish

No turkey, No problem. This is your vegan main dish that everybody will love, including your turkey friends.


For stuffing
Vegetable oil 2 Tablespoon
Chopped onion 1 Cup (16 tbs)
Chopped walnut 1/2 Cup (8 tbs)
Chopped garlic 2 Tablespoon
Coriander 2 Teaspoon
Cumin powder 2 Teaspoon
Salt To Taste
Diced squash 1/2 Cup (8 tbs)
Chili paste 1 Teaspoon
Pomegranate molasses 1 Tablespoon
For bulgur mould
Bulgur wheat 1 Cup (16 tbs)
Water 1 1/2 Cup (24 tbs)
Chopped onion 1/2 Cup (8 tbs)
Pumpkin puree 1 1/4 Cup (20 tbs)
Potatoes 2 , boiled
Salt To Taste
Paprika 1 Teaspoon
Cumin powder 1 1/2 Teaspoon
Black pepper 1 Teaspoon
Flour 1/2 Cup (8 tbs)
For sauce
Pomegranate 1 Tablespoon
Chili sauce 1 Tablespoon
Pomegranate molasses 2 Tablespoon
Olive oil 1 1/2 Tablespoon



For Stuffing

1. Heat oil in a pan.

2. Add onions and saute them such that they get caramelised.

3. Drop in walnuts, saute them as well.

4. Season with salt and add cumin, coriander and garlic. Mix it well.

5. Drop in butternut squash, chili paste and pomegranate molasses. Stir and cook for a minute. Don't overcook the stuffing. Set the stuffing aside.

6. Soak bulgur wheat in water for 30 minutes.

For base

7. Grind bulgur wheat with chopped onions in a food processor. Add potatoes and blend it well with the bulgur.

8. Take the mixture in a bowl and add to it, pumpkin puree, paprika, black pepper, cumin and mix it well to make a dough.

9. Throw in flour to bind everything well into a dough.

10. Grease a bread tin and place most of the dough in the tin. Spread it to take the shape of the bread tin. Spoon the stuffing in the center of the tin. Completely cover the stuffing with the remaining dough mix by patting it in between in palms.

11. Heat the oven to 400 F.

12. Put the stuffed bulgur loaf in the oven and bake it for about an hour.

13. Meanwhile whisk together pomegranate molasses, chili sauce and olive oil to make sauce for brushing.

13. Remove the loaf from the oven and flip it on a plate. Brush it with a pomegranate chili sauce.


14. Slice and serve the stuffed bulgur wheat slice with roasted vegetables of your choice.
