Olive oil | 1 Tablespoon | |
Salt flakes | To Taste | |
Extra virgin olive oil | 1/2 Cup (8 tbs) | |
Thyme sprigs | 3 | |
Rosemary sprig | 3 | |
Garlic | 5 Clove (25 gm) |
GETTING READY:
Preheat the grill.
MAKING:
Rub olive oil and salt flakes over the meat and place on grill rack.
Grill until the meat gets cooked from all sides by flipping frequently.
Ensure not to burn meat.
Once done, place on saucepan and add extra virgin olive oil, thyme, rosemary, (sage, oregano-optional) and garlic.
Place on smoker at 30-100C and cook until internal temperature reaches 50-55C for 2 hours.
Every 20 minutes top the meat with liquid in saucepan.
