Two beautiful dry aged ribeye steaks reversed seared on my Weber
Grill.
Ribeye steak | 2 (less than 18 ounces each) | |
Kosher salt | To Taste | |
Pepper | To Taste | |
Mixed herb leaves | 5 | |
Garlic head | 1 | |
Duck fat | 3 Tablespoon |
GETTING READY:
Preheat the grill.
MAKING:
Place the steaks on the grilling rack.
Season with salt and pepper on both sides.
Cover with the lid and grill until internal temperature reaches 120°-130°. Once done, take them off the grill, cover with an aluminium foil and allow to cool.
Heat duck fat on the flat surface of the grill. Grease the surface with duck fat using mixed herbs and garlic head as shown in the video.
Sear the grilled steaks for a minute.
