Raw Spaghetti Squash Pasta with Marinara Sauce

On this episode of The Veggie Chest, Dr. Ruby makes a raw garlic spaghetti squash with a rich and savory tomato sauce!


Squash 1 Large , seeds discarded, fruit grated with mandolin
Garlic 2 Clove (10 gm) , crushed
Olive oil 1 Tablespoon
For sauce
Roma tomatoes 3
Sundried tomato in olive oil with spices 1 Cup (16 tbs)
Date 1 , pitted
Fresh oregano 1/8 Cup (2 tbs)
Basil 1/5 Teaspoon
Sea salt 1/2 Teaspoon
Cayenne 1 Pinch
Garlic 2 Clove (10 gm)
Shallot 1 Small
Nutritional yeast 3 Tablespoon



1. Mix grated squash, garlic and olive oil together. Set it aside.

2. Prepare marinara sauce by blending together roma tomatoes, sun dried tomatoes, fresh basil, oregano, date, sea salt, basil, cayenne, garlic and shallot until it forms a cramy paste.

3. Pour the sauce over the squash and mix it all well.


4. Garnish with a herb of your choice and serve.


Heat the squash before adding the sauce, if you want something warm.
