Glazed Brussels Sprouts And Chestnuts

Chestnuts 8 Ounce , unshelled
Baby brussels sprouts 2 Cup (32 tbs) , trimmed (Use Small)
Small white onions 1 Cup (16 tbs) , peeled
Defatted chicken stock 1/2 Cup (8 tbs)
Maple syrup 2 Tablespoon
Apple cider vinegar 2 Teaspoon
Black pepper 1/2 Teaspoon , ground



1. With a sharp knife, cut an X in the flat side of each chestnut shell.

2. Place in a single layer in a 9" glass pie plate.

3. Cook by Microwave high-mode for 2 minutes.

4. Flip the pieces and microwave on high for 1 to 2 minutes, or until the nuts are soft when squeezed.

5. Let stand for 5 minutes, or until cool enough to handle.

6. Remove the shells.


7. Meanwhile, blanch the Brussels sprouts and onions in a large pot of boiling water for 5 minutes.

8. Drain and transfer to a large frying pan.

9. Add the stock, maple syrup, vinegar and pepper.

10. Cover and cook over medium heat for 5 minutes.


11. Add the chestnuts and cook for 5 minutes, or until the Brussels sprouts are just tender.

12. Remove the lid and cook, stirring, until the liquid is reduced to a glaze.
