Healthier Cheesy Nutty Creamed Spinach - A Mother's Day Special

Creamed Spinach is a simple side dish that adds immense nutritional value to your regular meal once you select the right mix of ingredients. The different nuts used in this dish are not only meant to provide a crunch but form an excellent source of healthy unsaturated fats and essential vitamins and minerals needed by our body.

Ingredients

Unsalted butter 1 Tablespoon
Olive oil 2 Tablespoon
Real light whipped cream 1 Cup (16 tbs)
Skim milk 1 Cup (16 tbs)
Reduced fat parmesan cheese 1 Cup (16 tbs) , shredded
Ground nutmeg 1/2 Teaspoon
Freshly ground white pepper 1/2 Teaspoon
Fresh spinach leaves 18 Ounce , coarsely chopped
Toasted pine nuts 1/4 Cup (4 tbs)
Toasted blanched almonds 1/4 Cup (4 tbs)
Toasted sesame seeds 1 Tablespoon (Leveled)
Salt To Taste

Directions

GETTING READY

1. Clean the spinach leaves thoroughly under running tap water and chop coarsely once water has drained.

MAKING

2. In a large saucepan or skillet, pour the olive oil, add butter and allow it to melt. Add the light whipping cream. Heat over medium-high heat.

3. Reduce heat, add skim milk and cook, stirring often for 15 minutes or until somewhat thickened.

4. At this stage add the toasted blanched almonds.

5. Stir in 3/4 cup of shredded reduced fat Parmesan cheese, salt, ground nutmeg, and white pepper. Mix well.

6. Add the fresh spinach and cook over low heat, for just 3 minutes or until spinach is cooked, stirring often.

7. Into a serving dish, ladle the spinach and sauce mixture, sprinkle the remaining shredded Parmesan cheese on top.

8. Finally sprinkle toasted pine nuts and sesame seeds on top.

SERVING

9. Serve immediately and enjoy piping hot with toasted garlic bread or wholewheat dinner roll.
