Cod A La Catalan

Ingredients

Cod 1 Pound
Bacon 1/4 Pound , diced
Onion 1 Large , chopped
Red pepper 1 , diced
Chopped parsley 1/2 Cup (8 tbs)
Potatoes 1 Pound , boiled and sliced
All purpose flour 2 Tablespoon
Cooking oil 3 Tablespoon
Salt To Taste
Pepper To Taste

Directions

Simmer cod for 10 minutes in lightly salted water.

Bone, and flake.

In a covered pan place first the bacon, onion, red pepper, parsley, salt, and pepper.

Cover with alternating layers of potatoes and cod flakes, dusting each layer of fish with a little flour.

Then fill with water to the top layer, cover, and bring to boil.

Add oil, cover, and simmer for another 10 minutes.
