|Olive oil||1/4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm) , finely chopped|
|Spinach||2 Pound , stemmed|
|Toasted pine nuts||1/4 Cup (4 tbs)|
|Seedless raisins||1/4 Cup (4 tbs)|
|Freshly ground black pepper||1/4 Teaspoon|
1. In a medium saucepan, bring lightly salted water to a boil. Add the spinach to the boiling water and blanch for 1 minute. Drain thoroughly; squeeze the spinach dry. Coarsely chop the spinach and transfer to a medium bowl.
2. In a medium skillet, heat oil over low heat; add garlic and cook 5 minutes until soft.
3. Add spinach, pine nuts, raisins, salt and pepper and cook 5 minutes more until flavors are combined. Serve immediately.
