Spanish Rice, AKA Mexican Rice is a super easy side dish to make.
Long grain rice | 2 Cup (32 tbs) | |
Vegetable oil | 2 Tablespoon | |
Chopped onion | 1 Cup (16 tbs) | |
Carrots | 3 Large , chopped | |
Garlic | 3 Clove (15 gm) , chopped | |
Chicken stock | 32 Ounce | |
Chopped tomatoes | 1 1/2 Cup (24 tbs) |
MAKING
In a pan, heat in vegetable oil, sauté together the rice, onions, carrots, and garlic.
Sauté until the rice just begins to brown. Pour in chicken stock.
Add in fresh tomatoes. Cook for approximately 20 to 30 minutes or until the rice is done.
SERVING
Serve with some chicken stew.
