Chicken Basque One-Pot meal Recipe

This is a hearty one-pot meal, that is full of flavour.

Ingredients

Sliced red pepper 2
Chicken thighs 6
Sliced onion 1 Large
Extra virgin olive oil 3 Tablespoon
Chorizo sausage 5 Ounce (cut into ½" (1 cm) pieces)
Sun dried tomatoes in oil
Chopped garlic cloves 2 Large
Tomato paste 1 Tablespoon
Hot paprika 1/2 Teaspoon
Basmati rice 1 Cup (16 tbs)
Chicken stock 10 Fluid Ounce
Dry white wine 6 Fluid Ounce
Orange 1/2 Large (cut into wedges)
Chopped fresh thyme 1 Teaspoon
Pitted black olives 2 Ounce
Hot pepper 1
Salt and fresh ground pepper To Taste

Directions

Making

Heat the pan with 2 Tbsp olive oil.

Season the chicken with salt and pepper.

Brown the chicken pieces – three at a time – on both sides. Remove them and put them on a plate

Now add the onion and peppersto the pan and allow them to slightly cook, stirring occasionally.

Add chorizo, sun-dried tomatoes and garlic and cook until the chorizo has taken on some colour. 

Stir in rice and coat the grains in oil, 

Add tomato paste, paprika and thyme. Pour in the chicken stock and wine. 

Bring to a gentle simmer. Place the chicken on top, with the orange wedges, hot pepper, and scatter with olives.

Cover with a tight-fitting lid and cook over low heat for about 50 minutes to an hour or until the rice is cooked. 

Note: you can also cook in a pre-heated oven at 350°F (180°C), for about an 1 hour.

Serve hot.
