Ripe tomatoes | 4 , chopped | |
Garlic | 1 Clove (5 gm) | |
Cucumber | 1 , peeled, seeded and chopped | |
Celery stalks | 2 , chopped | |
Red onion/Maui onion | 1/2 , chopped | |
Red bell pepper | 1/2 , sliced | |
Yellow bell pepper | 1/2 , sliced | |
Red wine vinegar/Balsamic vinegar | 2 Tablespoon | |
Fresh lemon juice | 1 Teaspoon | |
Olive oil | 1 Tablespoon | |
Salt | 1 Teaspoon |
MAKING
In a high speed blender, add in all the ingredients and blend well.
SERVING
Pour the soup in a bowl and garnish with avocado and serve.
