Quick Gazpacho - Easy Summer

Gazpacho is a super quick and easy cold soup recipe that uses all of Summer's freshest produce so you can have dinner on the table in minutes.


Ripe tomatoes 4 , chopped
Garlic 1 Clove (5 gm)
Cucumber 1 , peeled, seeded and chopped
Celery stalks 2 , chopped
Red onion/Maui onion 1/2 , chopped
Red bell pepper 1/2 , sliced
Yellow bell pepper 1/2 , sliced
Red wine vinegar/Balsamic vinegar 2 Tablespoon
Fresh lemon juice 1 Teaspoon
Olive oil 1 Tablespoon
Salt 1 Teaspoon



In a high speed blender, add in all the ingredients and blend well.



Pour the soup in a bowl and garnish with avocado and serve.
