Chimichurri Aioli - The Perfect Addition to Our Superbowl Sliders

Check out this easy to make from scratch aioli flavored with an Argentine Chimichirri sauce. I used this for out Superbowl Tri-tip steak sliders.

Ingredients

For homemade mayonnaise
Egg yolks 2
Lemon juice 1 Tablespoon
White wine vinegar 1 Tablespoon
Salt 3/4 Teaspoon
Dijon mustard 1 Teaspoon
Canola oil 1 Cup (16 tbs)
Olive oil 1/2 Cup (8 tbs)
For sauce
Flat leaf parsley 2 Cup (32 tbs)
Fresh oregano 1/4 Cup (4 tbs)
Salt 1 Pinch
Crushed red pepper 1 Pinch
Red wine vinegar 1/4 Cup (4 tbs)
Garlic cloves 4

Directions

MAKING

For Homemade Mayo:

1. In blender, add egg yolk, lemon juice, vinegar, salt, mustard, canola oil, and olive oil. Blend until creamy. Set aside.

For Sauce:

2. In blender, pulse parsley, oregano, salt, and crushed red pepper.

3. Add red wine vinegar and garlic. Pulse well.

FINALIZING

4. Into the homemade mayo add 5 heaping teaspoons of homemade chimichurri sauce.

SERVING

5. Serve on tri tip sliders and enjoy!
