Bauru is a popular Brazilian sandwich. The traditional recipe calls for cheese (usually mozzarella) melted in a bain-marie, slices of roast beef, tomato and pickled cucumber in a French bun with the crumb (the soft inner part) removed.

GETTING READY
1. Sprinkle salt and pepper generously on the steak.
2. Heat a grill to 250 degrees and place it on the heat and sear it on both the sides till the internal temperature reaches 125 degrees F.
3. Transfer it onto a foil, wrap it well and let it sit for an hour.
MAKING
4. Just before use, reheat the grill and sear the tri-tip once again. Remove from the heat and let it sit for 20 minutes.
5. After 20 minutes slice it thinly against the grain and place it back on the grill. Place them closely.
6. Flip them to get a nice sear and place mozzarella cheese slices on top. Cover and let the cheese melt.
7. Take the bottom half of the French bread. Place the steak and mozzarella cheese on it. Top it with tomato slices and finally dill pickle. Cover the sandwich with the other half of the bread.
SERVING
8. In a serving plate, slice and serve the sandwich with fries or chips.
