Garlic | 5 Clove (25 gm) | |
Onion | 1 Large ((white or yellow)) | |
Green bell pepper | 1 | |
Tomatoes | 2 | |
Dende oil | 1 Tablespoon ((palm oil)) | |
Salt | 1 Teaspoon | |
Pepper | 1/2 Teaspoon | |
Cumin | 1/2 Teaspoon | |
Tomato sauce | 1 Cup (16 tbs) | |
Coconut milk | 1 1/2 Cup (24 tbs) ((15 ounce can)) | |
Lime juice | 2 Tablespoon ((from 1 lime)) | |
Chopped cilantro | 1/3 Cup (5.33 tbs) | |
Cooked white rice | 2 Cup (32 tbs) ((for serving)) |
MAKING:
Heat a large pot with oil and saute onions in it until softened.
Add peppers, tomato, garlic, cumin, salt, pepper and saute for 60 seconds.
Add tomato sauce, coconut milk, lime juice and cover with lid.
Bring to boil and stir in seafood and cilantro.
Simmer for 5-10 minutes or until cooked.
Adjust salt and lime to taste.
SERVING:
Serve with white rice and enjoy!
