I combined McDougall's Costa Rica Potatoes and Beans recipes with ingredients I had on hand that needed to be used right away.

Poblano pepper 1 , chopped ((pan roasted))
Fresh cilantro 1/2 Cup (8 tbs) , chopped
Soy curls 1 1/2 Cup (24 tbs) ((taco flavored))
Cooked red potatoes 3 Cup (48 tbs) , quartered
Cooked black beans 2 1/2 Cup (40 tbs)
Black pepper 1/2 Teaspoon
For slaw
Fresh cilantro 1 Cup (16 tbs)
Cabbage 8 Ounce , shredded
Carrot 1 Medium , shredded
Dressing:
Mandarin oranges 3
Garlic 1 Clove (5 gm)
Lime slices 2 Tablespoon , peeled
New mexico chili powder 1 Teaspoon
Pepper sauce 1 Teaspoon ((Cholula))
