White Chicken Chili

Heres a crowd-pleasing, white-meat alternative to chili made with beef. Ideal for basketball or football watch parties, tailgating and casual gatherings.


Boneless skinless chicken breast 1 Pound , cut into cubes
Cannelini beans 45 Ounce , drained (1/2 cup liquid retained)
Corn oil 1/4 Cup (4 tbs)
Onion 1 Large
Garlic cloves 4 Large , chopped finely
Ground cumin 1 Tablespoon
Dried oregano 1 Teaspoon
Dried crushed red pepper 1/4 Teaspoon
Chicken broth 1 Cup (16 tbs)
Diced green chiles 9 Ounce
Whipping cream 1/2 Cup (8 tbs)
Cheddar cheese 1/4 Cup (4 tbs) , grated
Fresh cilantro 2 Tablespoon , chopped




1.  In a Dutch oven, heat oil over medium heat. Add onion, cumin, oregano, dried red pepper and green chiles, sauté for 5 minutes. 


2.  Add the chicken to the pan and season with salt and pepper. Sauté for approximately 5 minutes.


3.  Add in the beans, reserved liquid, broth. Simmer until the chicken is tender and cooked through, this will take about 15 minutes. Season to taste with salt and pepper. Finish the chili with heavy cream.





4.  Garnish with grated cheddar cheese and chopped cilantro.
