In this video, Betty demonstrates how to make Asparagus Soup for Christmas. This is a great, tasty addition to a holiday table.
Fresh asparagus | 1 Pound | |
Water | 1/2 Cup (8 tbs) | |
Butter | 3 Tablespoon | |
Onion | 1 Medium , chopped | |
All purpose flour | 3 Tablespoon | |
Chicken broth | 3 Cup (48 tbs) | |
Salt | 1/2 Teaspoon | |
Ground white pepper | 1/2 Teaspoon | |
Sour cream | 3 Tablespoon |
GETTING READY
1. Wash asparagus, pat dry with paper towel, cut off the bottom and discard. Cut the remaining asparagus into 2-inch pieces.
MAKING
2. In a medium sized pot, bring water to a boil, add asparagus pieces and cook about 3-5 minutes or until tender. Drain well and reserve the liquid. Set aside.
3. In a deep skillet, melt butter and saute onion over medium heat for about 4 minutes or until translucent.
4. Add flour, stir constantly and cook for 5 minutes, or until mixture is thickened and golden.
5. Stir in reserved asparagus liquid and mix until smooth.
6. Add cooked asparagus pieces, chicken broth, salt, and pepper. Bring to a boil.
7. Turn off the flame and stir in sour cream. Let cool slightly.
8. In a blender, process the mixture until smooth. Return the mixture to skillet and heat, if needed. Do not boil.
SERVING
9. Serve soup hot garnished with shaved Parmesan and sprinkle of nutmeg.
