Curried Pumpkin Soup

Don't open a can of soup, make some homemade. Perhaps you have one can of pumpkin left after your holiday, I can show you how to make soup of this can of pumpkin. Easy to prepare, this soup contains, chicken broth or chicken stock, pumpkin puree, onions, and bit of heavy cream.

This makes up a creamy soup with a touch of curry. You can make this homemade soup in about 20 minutes.

Ingredients

Onion 1/2 Cup (8 tbs) , chopped finely
Butter 2 Tablespoon
Salt To Taste
Curry powder 1/2 Teaspoon
Canned pumpkin puree 14 Ounce (1 can)
Chicken stock 2 Cup (32 tbs)
Heavy cream 2 Tablespoon
Lime 1/2 Medium , juiced

Directions

MAKING

1. In a pan heat butter and sauté onions. Season with a little salt and curry powder and continue to sauté till it turns translucent.

2. Pour the chicken stock and bring to boil. Add heavy cream and continue to cook for another 10 minutes (If smooth soup is desired blend the soup with an immersion blender blend till smooth).

3. Add the lime juice and heat it through. Turn off the heat.

SERVING

4. Serve the soup steaming hot with any bread of choice.
