Turkey Meatball Soup with Mixed Greens

This easy to prepare lemon and herb infused turkey meatball soup with mixed greens is one of my top 5 favorite soup recipes of all time!


For turkey meatballs
Ground turkey 1 Pound
Lemon herb salt 1 Teaspoon
Black pepper 1/2 Teaspoon
Grated white onion 1 Tablespoon
Minced celery 1 Tablespoon
Minced garlic 1 Teaspoon
For soup
Extra virgin olive oil 1 Tablespoon
Butter 1 Tablespoon
Finely diced onion 1 Cup (16 tbs)
Finely diced celery 1/2 Cup (8 tbs)
Diced carrots 1/2 Cup (8 tbs)
Low sodium chicken stock 6 Cup (96 tbs)
Chopped mixed greens 4 Cup (64 tbs) ((like Swiss chard, spinach, and kale))
Black pepper 1 Teaspoon
Lemon juice 1 Tablespoon



For Meatballs:

1. In a mixing bowl, combine ground turkey, lemon herb salt, black pepper, grated white onion, minced celery, and minced garlic. Mix and form mixture into cocktail sized balls. Set aside.

For Soup:

2. In a large soup pot, saute the celery, carrots, and onion in butter and olive oil over medium high heat.

3. When the vegetables just begin to turn soft, add the meatballs a few at a time and let them saute a little to get well coated in the olive oil and butter.

4. Pour chicken stock and bring to a boil. Cover, turn the flame to medium low and simmer for 30 minutes or until everything is cooked through.

5. Add greens, stir well and squeeze lemon juice. Remove the pot from flame, cover with lid and let the soup rest for 15 minutes before serving or cool completely and refrigerate for later use.


6. Serve and enjoy!
