Simple Tomato Soup with Fresh Cream

Looking for a good warming soup to sip in on a cold winter day or when down with fever? This one is pretty good enough to serve both purposes and even to make its way to a formal or informal dinner table. Spiced up with pepper, this hearty soup is definitely a serial pleaser.

Ingredients

Salted butter 1/2 Tablespoon
Onion 1 Small , chopped finely
Crushed garlic 5 Gram (about 5 cloves)
Tomato puree 200 Milliliter
Vegetable stock 100 Milliliter
Shallots 5 , white alone, halved
Freshly ground pepper 1 Teaspoon
Cilantro 5 Gram , chopped finely
Fresh cream 75 Milliliter (75 ml cream + 25 ml water)
Italian seasoning mix 1/4 Teaspoon (to garnish) (Optional)

Directions

MAKING

1. Heat butter in a saucepan and sauté onions and garlic, for about 3-5 minutes

2. When the vegetables become tender, pour in the puree. Let it bubble and followed by vegetable stock and shallots. Season with ground pepper and chopped cilantro. Let it boil and then simmer.

I did not add salt in mine, since stock already had enough for the soup.

3. Now stir in the fresh cream little by little taking care not to boil. When just heated through, remove from pan.

SERVING

4. Serve warm garnished with Italian seasoning (or any other seasoning of your choice) along with grilled sandwich.
