White Cheddar Cheese Beer Soup is easy to make. This recipe combines the a nice pilsner or lager beer and white cheddar cheese. This soup is topped with crispy bacon and tiny diced jalapeno pepper.
Beer | 12 Fluid Ounce ((any lager or pilsner)) | |
Chicken stock | 2 Cup (32 tbs) | |
Carrots | 1/2 Cup (8 tbs) , chopped | |
Celery | 1/2 Cup (8 tbs) , chopped | |
Onions | 1/2 Cup (8 tbs) , chopped | |
Garlic | 1 Tablespoon , chopped | |
Mustard powder | 1 Teaspoon | |
Worcestershire sauce | 1 Tablespoon | |
Milk/Half and half | 1 Cup (16 tbs) | |
Butter | 6 Tablespoon | |
Flour | 6 Tablespoon |
MAKING
1. In a pot over medium low heat, meat butter and sweat onion, carrots and celery for about 3 to 5 minutes or until vegetables are slightly soft.
2. Add in the flour, and stir continuously for 2 minutes.
3. Pour in beer, milk and chicken stock and stir well.
4. Add in Worcestershire sauce and mustard powder. and stir well to mix.
5. Allow the soup to come just to boil and add in cheese little at a time and stir as you add.
6. Heat the soup, the cheese melts, stirring continuously.
SERVING
7. Serve hot in warm soup bowl sprinkle crispy bacon and sliced jalapenos on top if desired.
