Raw Cantaloupe Soup

It's summer and the cantaloupe this year so far has been awesome...Today, Annmarie makes a raw food recipe for Cooling Cantaloupe Ginger Soup.

Ingredients

Cantaloupe 1 Small , peeled, seeded, cut into large pieces
Carrot 1 Large , peeled, cut into large pieces
Basil 1 Tablespoon , chopped
Lemon 1 Medium , juiced
Cashew 1 Tablespoon
Almonds 1 Tablespoon
Ginger 1 Teaspoon , grated

Directions

MAKING

1. In a blender, put cantaloupe, carrot, basil, lemon juice, cashew, almonds and ginger. Blend till smooth.

SERVING

2. In a serving bowl, pour the soup and serve it garnished with basil leaves.

TIPS

If more sweetness is required, then add honey and blend till combined.

If the cantaloupe shells are retained by scooping out the flesh before blending, the soup can be served in it.
