Bean and Ham Soup

Bean and ham soup has been a classic favorite, but when it is homemade it rises to a whole other level especially with the intense flavor of ham. This simple soup recipe will warm your friends and family during the cold months and have them going in for seconds.

Ingredients

Olive oil 2 Tablespoon
Onion 1 Medium , chopped
Garlic 2 , minced
Celery stalk 3 , chopped
Carrots 3 , peeled, chopped
Potato 1 Large , chopped
Ham shank 2 , smoked
Chicken stock 6 Cup (96 tbs) (no salt added or low sodium)
Bay leaves 3
Herbes de provence 2 Teaspoon
Cannelloni beans 15 Ounce , drained, rinsed (white beans)
Salt and pepper To Taste

Directions

MAKING

1. Place a large pot over medium-high flame, add olive oil, onion, and garlic in it. Stir, and cook for 5 minutes.

2. Drop celery and carrots in the pot. Cook for 2 more minutes.

3. Add potato, ham shanks, chicken stock, cannelloni beans, bay leaves, and herbes de provence. Stir, and bring it to a boil.

4. Reduce the flame to medium low, cover, and cook for 90 minutes.

5. Remove ham shanks from the pot, and place them on a plate to cool.

6. Cut down meat from the bone and drop it back into the pot. Discard the bones.

7. Place the pot back on flame, and allow it to simmer for an hour.

8. Taste and adjust seasoning of salt and pepper.

SERVING

9. Serve bean and ham soup hot with green salad.
