Yellow Pea Soup

Ingredients

Dried yellow split peas 1 Pound
Water 1 Cup (16 tbs)
Lean salt pork/Ham bone 1/2 Pound , finely chopped
Onions 5 Medium , finely chopped
Butter/Margarine 2 Tablespoon
Leek 1 , chopped to make 1 cup
Dried savory leaves 1/2 Teaspoon
Snipped chives/Minced scallion 1 Teaspoon
Salt 1 Teaspoon
Ground pepper 1/2 Teaspoon

Directions

GETTING READY

1. Soak peas overnight. Cover, and store in refrigerator.

2. Drain and wash peas, next morning.

MAKING

3. In a 6-quart kettle, cover peas with 1 quart water.

4. In kettle, add salt pork and half of chopped onion.

5. Heat till it reaches boiling point.

6. Reduce the heat and boil for 90 minutes keeping uncovered. Add water if needed during the cooking process.

7. In Skillet, melt butter.

8. In hot butter, cook remaining chopped onion and leek until just tender.

9. Add the mixture to kettle

10. Mix chives, savory, 2 cups of water, salt and pepper.

11. Boil again for 30 minutes till peas get tender.

SERVING

12. Serve Yellow Pea Soup with bread.
