Summer Squash Soup

Ingredients

Water 2 Cup (32 tbs)
Beef flavor bouillon cubes 2
Zucchini 2 Medium , sliced
Onions 2 Medium , sliced
Hot sauce 1/8 Teaspoon
Freshly ground pepper To Taste
Plain yogurt 6 Tablespoon (1/4 cup plus 2 tablespoons)

Directions

MAKING

1) In a pot, add water, bouillon, zucchini, and onions and allow to boil.

2) Place a lid over and lower the heat.

3) Allow to simmer for 10 to 15 minutes.

4) Stir in the hot sauce and pepper.

5) Add in the squash mix into a container of an electric blender.

6) Add in the yogurt and blend till smooth.

SERVING

7) Dot with cream and serve hot.
