Mushroom Barley Soup

Dried mushrooms 6
Pearl barley 3 Tablespoon
Water 2 Quart
Kosher salt 2 Teaspoon
Pepper 1/4 Teaspoon
Onions 2 , diced
Butter 2 Tablespoon
Flour 2 Tablespoon
Milk 3/4 Cup (12 tbs)



1) Under running water, wash the mushroom and soak for about 10 minutes

2) Using a sharp, knife, slice finely


3) In a saucepan, cook the mushrooms, barley, salt and pepper and water

4) Cook over a low heat for about 1 hour

5) In a frying pan, melt the butter and add the onion

6) Add the browned onions to the soup

7) In a bowl, add in the milk and mix in the flour

8) Add the flour to the soup and cook on a low flame for about 15 minutes


9) Ladle the soup into warm soup bowls and serve with a drizzle of cream
