Pumpkin Soup

Ingredients

Pumpkin 1 , peeled, seeded and cut up
Onions 2 , sliced
Split peas 1/2 Cup (8 tbs) , soaked beforehand
Salt To Taste
Pepper To Taste
Meat and bones 1/2 Pound
Cabbage leaves 2 , cut finely
Thyme sprig 1
Butter 1 Tablespoon
Water 1/2 Cup (8 tbs) (Use As Required)

Directions

MAKING

1) In a non-stick pan, heat the butter and lightly saute the onions.

2) Stir in the pumpkin, peas, meat, cabbage, thyme and seasoning.

3) Pour in the water to cover and simmer for about 1 hour.

4) Pass the pumpkin mixture through the sieve.

SERVING

5) Serve the soup hot garnished with chopped parsley if desired.
