Ham and Bean Soup

Ingredients

Dried great northern beans 1 Pound
Water 6 Cup (96 tbs)
Cubed cooked ham 1 1/2 Pound
Salt 2 Teaspoon
Dried whole thyme 1 Teaspoon
Dried parsley flakes 1/2 Teaspoon
Peppercorns 4
Garlic 3 Clove (15 gm) , minced
Bay leaf 1
Water 2 Cup (32 tbs)
Potatoes 4 Medium , peeled and quartered
Carrots 3 , scraped and cut into 1/2
Onion 1 Medium , finely chopped

Directions

GETTING READY

1. Start by sorting and washing the beans

MAKING

2. In a Dutch oven, place the beans along with water 2 inches above the beans, soak overnight

3. Drain it the next morning, later combine beans and 6 cups of water along with the next 7 ingredients, cover and simmer for 90 minutes over low heat

4. Add water 2 cups and vegetables to soup, and cook for 30 minutes till they are tender

SERVING

5. Serve with breadsticks, garlic bread, salads
