Spinach Soup

Ingredients

Olive oil 2 Teaspoon (10 Milliliter)
Onion 1 Medium , chopped
Garlic 1 Clove (5 gm) , crushed
Spinach 12 Ounce , washed and shredded (350 Gram)
Apple orange juice 3/4 Pint , mixed (450 Milliliter)
Fresh root ginger 1/2 Inch , grated
Ground coriander 1 Teaspoon (5 Milliliter)
Yogurt/Soured cream 1/4 Pint (150 Milliliter)
Gomasio/Salt if preferred To Taste (150 Milliliter)
Black pepper To Taste

Directions

MAKING

1.Take a large saucepan, heat oil in it and fry the onions and garlic together for 4-5 minutes, until onion turns tender.

2.Stir in spinach and stir fry it for 2-3 minutes on high heat.

3.Add fruit juices along with ginger and coriander.

4.Boil the mixture.

5.Once done, put the lid on and simmer for 20 minutes.

6.Allow to cool and then blend to bring in liquid form.

7.Add cream or yogurt and season with pepper and gomasio.

8.Reheat.

SERVING

9.Serve warm in bowls.
