Fresh Watercress Soup

Ingredients

Chicken stock 2 Pint (1.1 Liter)
Light soy sauce 2 Tablespoon
Sugar 1 Teaspoon
Watercress leaves 8 Ounce (225 Grams / 3Bunches)
Fresh ginger 1 Teaspoon , finely chopped
Spring onions 1 Tablespoon , finely chopped

Directions

MAKING

1. In a large stock pot, bring the stock to a simmer. Add the soy sauce and sugar, stir and simmer for 3 minutes.

2. Add the watercress leaves, ginger and spring onions to the pot and then cook again for 4 minutes.

SERVING

3. Serve immediately
