Ingredients

Skinless boneless chicken tenderloins 6 , cut into 1 inch pieces
Low sodium chicken broth 29 Ounce (2 cans, 14 1/2 ounces)
Canned kidney beans 15 Ounce (1 can)
Salsa 1 Cup (16 tbs)
Frozen corn 1 Cup (16 tbs)
Instant rice 1/2 Cup (8 tbs) (UNCLE BEN'S Brand)
Shredded monterey jack cheese 1/3 Cup (5.33 tbs)

Directions

MAKING

1 In a large saucepan, mix together chicken, broth, kidney beans, salsa and corn.

2 Bring to a boil.

3 Lower the heat and simmer uncovered for 5 to 10 minutes or until chicken is no longer pink.

4 Stir in the rice and cover.

5 Remove from the heat and allow to stand covered for 5 minutes.

SERVING

6 Serve each portion topped with cheese.
