Shrimp & Corn Soup

Ingredients

Chopped onion 1/2 Cup (8 tbs)
Bacon drippings 2 Tablespoon
Canned whole kernel corn 17 Ounce , drained (1 Can)
Canned tomatoes 28 Ounce , drained (1 Can)
Potatoes 4 Medium , peeled and cubed
Salt 1 Tablespoon
Pepper 1/2 Teaspoon
Chopped parsley 1/2 Cup (8 tbs)
Water 2 Quart
Peeled shrimp 1 Pound (Raw)

Directions

MAKING

1) In a Dutch oven heat bacon drippings and sauté onion till soft.

2) Combine next 6 ingredients and cook in simmering heat for 15 minute. Stir occasionally.

3) Mix water and bring to a boil.

4) Add shrimp and cook for further 10 minutes.

5) Sprinkle chopped parsley over soup. Simmer and cook 25 minutes.

SERVING

6) Serve hot immediately.
